BERKELEY COUNTY, S.C.–Canning season is here!  Really, food can be preserved using one method or another year round. Clemson University Cooperative Extension Service is your local resource for research based food preservation information.  Some changes have been made to home canning methods over the years to improve the safety of canned items. Recommendations have changed for some items. Consumers can find current information on the Clemson Home and Garden Information Center website at www.clemson.edu/extension/hgic/.

The Berkeley County Extension office is offering three food preservation workshops in the upcoming months.  Participants will learn how to use current, USDA tested, canning methods to preserve foods.  Workshops will be held from 10am – 2pm at the Berkeley County Administration Building, 1003 Hwy 52 ( Room 106-B ) in Moncks Corner. The cost for each workshop is $30.  Participants will take home a copy of the Ball Blue Book Guide to Preserving, handouts and items prepared during the class.

Workshop topics are: Pickles and Relishes – 6/29, Freezing and Dehydrating – 7/10 and Jams and Jellies – 8/2.  Workshops are open to persons with or without canning experience.
